Vegetarian Potimarron Couscous and Lentils


A new wave of cold arrives and you want comfort food dishes, comforting? That's my case ! I dream of hot and spicy food, to warm the body to the tiptoes. So I redid a vegetarian couscous , with dumplings with green lentils, nourishing and tasty. It is a complete dish that appeals to all. You can adapt the vegetables according to the seasons: there I used pumpkin but you can take carrots, zucchini, fennel, artichokes ... according to the local productions!
Couscous of pumpkin and vegetable dumplings
For 4 people
Preparation: 30 min
Cooking: 20 min
Difficulty: Very easy
ingredients
140 g of green lentils
2 onions
1 pumpkin
3 tablespoons of olive oil
1 teaspoon of cumin
1 teaspoon of ras el hanout
1 cube of vegetable broth
300 g of semolina
Preparation
- Dip the lentils in a pan of unsalted water. Bring to a boil and cook slowly for 20 minutes. Remove from heat and drain.
- Peel and slice the onions. Peel the squash and cut it in half to remove the seeds. Detail the flesh in dice.
- In a skillet, heat oil. Return the onions 3 min. With the spices. Add the potimarron dice and continue cooking for 5 min.
- Add the vegetable broth and 1 liter of water. Cook 10 min.
- Mix the lentils with a pinch of salt. Form dumplings in your hands.
- Cook the semolina. Spread it on plates with the vegetables, the meatballs and a good ladle of hot broth.
