I want to share with you my favourite recipe. I like to cook it for special holidays.
It is a dish of Russian cuisine, that was created in 19th-century by the French chef Urbain Dubois in the employ of Prince Orloff.
This dish consists of braised veal, thinly sliced, a thin layer of sliced potatoes, onions and cheese.
Veal may be replaced by cheaper sorts of meat, such as beef or pork.
Ingredients:
- 500 g of veal
- 400 g of potatoes
- 2 medium sized onions
- 300-400 g of cheese you like
- Mayo
- 50-100 g of butter
- Salt
- Pepper
- Italian herbs (to your liking)
- Vegetable oil (to oil the baking tray)
It is not difficult to cook this dish. But it takes some time.
First you must slice veal, potatoes and onion. Thick slices will cook longer time. That’s why I make thing slices.
I prefer to beat off meat to make a delicate texture of it.
Then add salt, pepper, Italian herbs (to your liking) in proportion you like. Mix these condiments with meat well. Leave meat for 10-15 minutes to marinate for better taste.
In sliced potatoes I add some salt and pepper, 1tblsp. of mayo and mix well.
Then slice onion and grate the cheese.
Oil your baking tray and lay the layer of veal, then layer of potatoes, grease layer with some mayo, then sliced onion, layer of some mayo. I add 100 ml of water, but it is not necessary.
Put some small pieces of butter on a layer surface. Then cover all with grated cheese.
Don’t forget to add some love.
Bake this dish about 1 hour (180°C).
All is ready!
