Ingredients.
- 600 grams of carp.
- 250 grams of pickled mustard green (Drain and cut into small pieces).
- 2 tomatoes (cut into wedges).
- 1 turmeric (chopped) or 1 teaspoon turmeric powder.
- 2 shallots (finely chopped).
- Dill, green onion ( cut into 2 inches).
- Fish sauce, salt, sugar.
Instructions.
- Wash the fish carefully. Heat oil in a large pan over medium heat, add fish and fry the fish on both sides till golden. Put the fish in a bowl, set aside.
- Heat oil in the pan (with fried fish) over high heat, add shallot, turmeric and stir well till golden. Then add tomatoes, pickled mustard green, continue to stir mustard green till dry and wilted.
- Pour the pickled mustard green brine and 3 cups of water. Bring to a boil for about 15 minutes.
- Add fish and simmer for about 30 minutes.
- Season with 3 teaspoon sugar, 2 tablespoon fish sauce and 1 teaspoon salt.
- Garnish with green onion and dill. Serve hot with rice noodles.
- PS: if you using dried noodles, bring a large pot of water to boil, soak noodles, stiriing until softened, usually about 8 minutes. Drain and rinse with cool water.
