A cheese to take care of our gut

Researchers have selected strains beneficial to health to develop a new Emmental. The cheese, already tested on animals, could help prevent colitis, an inflammation of the intestine. Its probiotic properties are currently evaluated in a clinical trial.

Fermented products such as cheese , wine or sausage require the presence of microorganisms that contribute to the formation of flavors, texture and preservation of the finished product. At the same time, certain microorganisms , called " probiotics ", often present in food supplements, are used for their health benefits ( immunity , digestion ...).

Researchers at UMR STLO (Science and Technology of Milk and Egg), based at INRA in Rennes , came up with the idea of ​​creating a cheese that would use "2 in 1" bacteria , endowed with both probiotic and cheese properties.

Scientists have been interested in several bacterial strains, starting with Propionibacterium freudenreichii , a bacterium used in cheese refining that promotes the formation of emmental holes. Some strains seem beneficial to health, thanks to an anti-inflammatory effect. Researchers also worked with strains of Lactobacillus delbrueckii and Streptococcus thermophilus , lactic acid bacteria found in yogurts and some cheeses.

The experimental cheese was developed by combining several strains, as Gwenaël Jan, research director, explains in Le Parisien . "We then asked a Breton manufacturer to make an Emmental cheese from the three selected strains. " Tests on the mouse show that this new type of drug prevents colitis , an inflammation of the intestine. The researcher adds, "We also realized that it could lessen the side effects of chemotherapy ." Trials are underway in humans, according to a statement from INRA .
